100% Chocolate?

In the chocolate making world this is sometimes called “Cacao Paste” or “Cacao Liquor” and it is used as a base for all kinds of recipes.

Crafted with ceremonial grade (think premium organic & ancestral cultivation) cacao cultivated in Xoconusco, Chiapas. This was our first origin, the one we have worked with the longest and is a very special place for Fortuna.

Ceremonial Cacao?

You may have noticed the trend ‘Ceremonial’ when buying chocolate lately. While this is a very new industry and does not have official terminology or agreed upon standards. The basic idea is incorporating chocolate drinking into a spiritual, sometimes daily, practice.

The chocolate is made with the very highest integrity cacao, grown organically and cultivated at origin with ancestral lineage. Very little or zero, as in the case with our version, sugar or sweeteners are added in order to experience the full potential of the cacao.

Hot Sipping Chocolate?

This term is used for highly concentrated hot chocolate. The liquid can vary from water to all kinds of milks but the idea is that it is very thick and has a strong flavor of cacao.

Think ‘espresso’ or ‘cortado’ to borrow from coffee terminology. We like to start with melting 100% cacao chocolate - like the one we are now offering in the Bodega - and stir in a small amount of hot liquid.

Cold Drinking Chocolate?

If you have ever visited us at the Boulder Farmers Market you will definitely have seen our cold drinking chocolates. They were epic.

Start with the same recipe as you would for the hot sipping chocolate, then mix in some additional room temperature liquid (water or milks) and add ice, top with whipped cream of your choice and if you feel extra sassy add some chopped chocolate to the top to snack on.

Pantry Chocolate?

Do you love to bake? Do you care about the quality of your flour, sugar, spices? Then we bet you also care a lot about the chocolate that lives in your pantry. You are probably not baking with artesanal ‘bean to bar’ chocolates at $10 a bar…. but you could be baking with artesanal ‘bean to slab’ chocolate at $30 a pound.
